Recipe: South Indian Lemon Pickle

Ingredients
- Lemon: 4 nos
- Garlic: 1 pod
- Ginger: 1 inch piece
- Small green chili: 4 nos
- Curry leaves- 1 spring
- Salt 1 Tablespoon
- Fenugreek powder-1/4 tablespoon
- Asafetida powder-1/4 tablespoon
- Sesame oil or any other oil- 1 tablespoon
- Mustard seeds-1/4 tablespoon
- Vinegar: 1/4 cup
- Water: 1/4 cup
Instructions
- Cut green chili, ginger and garlic in to small pieces.
- Cut lemons in to small cubes.
- Heat oil in a pan and allow mustard seeds to crack up.
- Add curry leaves, green chili, ginger and garlic and mix for 2-3 minutes.
- Add lemon, salt, fenugreek powder and asafetida powder. Mix and cook for 1 minute.
- Add vinegar and water to this mixture and heat until it boils.
- Remove from flame and cool to room temperature before storing in air tight bottles.
